Chunky Peanut Butter Oatmeal Cookies

My two favorite cookies in one: peanut butter and oatmeal. Ahhh. Love these cookies, not too sweet and tons of peanuts and peanut butter surrounded by oats. They could almost be classified as a breakfast cookie, high in protein, low in sugar and flour. At least that is what I’m going to tell my self as I’m eating my 5th one for today!


1/2 Cup all purpose flour

2 Cups old fashioned rolled oats

1/2 Cup packed light brown sugar

1 teaspoon baking soda

1/4 teaspoon salt

1 Cup peanut butter

1 Cup peanuts, roughly chopped

3 eggs

2 teaspoons vanilla extract

1 stick unsalted butter, softened


  1. Mix wet ingredients
  2. Mix dry ingredients
  3. Combine ingredients. Scoop 1-2 Tablespoons on a parchment lined baking sheet. Pat each one down just slightly. Bake at 350 for 15 minutes. Remove from oven and allow to cool for 30 minutes.
