Chocolate Chia Breakfast Muffins

Ingredients:

2 ripe/overripe bananas

1 Cup Greek non fat yogurt

1/2 Cup oil

1/3 Cup brown sugar

1/3 Cup organic sugar

1 T chia seeds

1 egg

1 t vanilla extract

pinch of salt

2 T cocoa powder

1 2/3 Cup all purpose flour

2 t baking powder

Directions

  1. Set oven to 350 and line two muffin pans with liners
  2. Mash bananas in a mixing bowl
  3. Mix in all other ingredients and stir well to combine
  4. Scoop mixture to fill 1/2 way
  5. Bake at 350 for 15-17 minutes or until tooth pick comes out clean

*These make great additions to lunches or dinners!
