Beet Blueberry Banana Muffins

Ingredients

4 small whole beets (I love the libby’s canned small whole beets)

1/2 Cup fresh blueberries

1/4 C oil

1/2 Cup Non fat greek yogurt

1 ripe/overripe banana

1 T flex seeds milled

1 T chia seeds

1 egg

1 t vanilla extract

1 1/2 C all purpose flour

2 t baking powder

1/2 Cup organic sugar

Directions:

  1. Set oven to 350 and line 2 muffin pans with liners
  2. In a food processor combine everything except the flour and baking powder
  3. Once all combined and mixture to flour and baking powder
  4. Scoop into muffin liners 3/4 full
  5. Bake at 350 for 17-20 minutes or until a tooth pick comes out clean
