I’ll admit it…zucchini is NOT my fav veggie. But this sweet tangy grilled zuke recipe will get me to the table every time. That sweet/tang flavor the balsamic vinegar gives the zucchini and then grilling to seal in that flavor just makes these a show stopper side dish.
3 medium-large zucchinis, sliced lengthwise into one inch slices
1/4 Cup balsamic vinegar
1/8 Cup oil
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
- Throw all the ingredients into a ziploc bag and refrigerate for 30 minutes (and up to 1.5 hours).
- Heat a grill to medium/high heat grill (400 degrees)
- Remove zucchini from marinade (discard marinade) and grill the zucchini 3-5 minutes on each side
- Serve immediately
