Quick Pickled Onions

Ingredients:

1 red onion, thinly sliced

1 Cup water

1 Cup white vinegar

2 Tablespoons sugar

1 teaspoon salt

1 teaspoon freshly cracked black pepper

2 garlic cloves, sliced in half

Directions:

  1. In a saucepan add all the ingredients and bring to a boil. Stir constantly and dissolve sugar, about 2-3 minutes.
  2. In a glass container arrange the thinly sliced onion. Pour contents of saucepan over top and make sure the onions are all submerged.
  3. Refrigerate at least 10 minutes. Store in fridge for up to 2 weeks
