Simple Ricotta Pasta

See ya later Alfredo sauce…hello Ricotta sauce! This dish comes together in as much time as it takes to boil pasta. It’s so simple, requires only 2 ingredients and can be dressed up or down.


1 lb. Rigatoni (or pasta of your choice)

1 Cup Ricotta

1/2 teaspoon red pepper

1/2 teaspoon salt

1/4 Cup reserved pasta water


  1. Boil pasta according to package directions. *Reserve 1/4 Cup pasta water before draining.
  2. Add the drained pasta back to the pot and set heat to simmer/low. Add 1/4 Cup pasta water, 1 Cup Ricotta, 1/2 teaspoon of red pepper flakes and 1/2 teaspoon of salt. Stir to combine and turn off the heat.
  3. Serve immediately. *Optional* Garnish with a sprinkle of red pepper flakes over the top.
