Hello Spring AND asparagus season! I love creating recipes with asparagus because they are not only versatile but also an inexpensive yet healthy ingredient. The breadcrumbs give a little crunch to an otherwise ordinary roasted asparagus dish-yum!
Ingredients:
1 lb. Asparagus, woody ends trimmed
1 Tablespoon oil
1/8 teaspoon salt (pinch)
1/8 teaspoon pepper (pinch)
1/4 teaspoon garlic powder
Breadcrumb ingredients:
2 Tablespoons butter
1/8 teaspoon salt (pinch)
1 Cup Panko style bread crumbs
1/4 Cup Parmesan, grated or shredded
Directions:
1. Heat oven to 375. On a foil lined baking sheet add the trimmed asparagus, 2 Tablespoons oil, 1/8 salt, 1/8 pepper, 1/4 garlic powder. Toss the asparagus to coat with the oil and seasonings.

2. Bake the asparagus for 7-10 minutes or until asparagus spears are slightly softened but still crisp.
3. While the asparagus is roasting make the breadcrumb mixture. Melt 2 Tablespoons in a pan on low-medium heat. Once melted add breadcrumbs and salt stirring constantly. Once breadcrumbs turn a golden brown (around 1-3 minutes) remove pan from heat. Allow to cool slightly and toss in the Parmesan and mix.

4. Arrange asparagus on a plate with spears facing up in a line. Sprinkle with breadcrumb mixture and serve immediately.
